Ingredients
60 g Pine Nuts 1 Mango 250 g Mozzarella 1 Avocado 250 g Rocket 100 ml Orange Juice 1 tbsp Honey 3 tbsp Olive Oil Lemon Juice Salt Pepper Chili Flakes Baguette

60 g Pine Nuts
Roast pine nuts.
Mise en Place
1 Mango
Peel and dice mango.
250 g Mozzarella
Dice mozzarella.
1 Avocado Lemon Juice
Dice avocado and sprinkle with a bit of lemon juice.
250 g Rocket
Clean rocket and cut into smaller pieces.
100 ml Orange Juice 1 tbsp Honey 3 tbsp Olive Oil Salt Pepper Chili Flakes
Reduce orange juice to half. Season with honey, salt, pepper and chili and mix with olive oil.
Assembly
Baguette Mango Avocado Mozzarella Rocket Dressing Pine Nuts
Carefully mix all ingredients except pine nuts, then sprinkle pine nuts on top. Serve with baguette.
